Onion and cabbage pakodas



Onion & Cabbage Pakodas

Ingredients:

3 Onions finely sliced
1 cup cabbage finely chopped
1 tsp red chilli powder
1/2 tsp haldi
1/2 tsp each of coriander & cumin powder
1/2 tsp garam masala powder
salt as per taste
1 cup besan/ gram flour
2-3 green chillies finely chopped
2 tsp of rava /semolina 
Water to make medium batter
1/2 cup coriander leaves chopped
Pinch of  hing/ asafoetida

Method:

1. In a bowl, add chopped cabbage, onions, green chillies, coriander leaves and now add besan/gram flour, coriander & cumin powder, turmeric powder,rava, red chili powder, garam masala, asafoetida and salt mix every thing well now add  little water to make batter and stir very well. the pakora batter should not be thin but of medium thick consistency 

2.Heat oil in a kadai, keep the flame medium. when the oil becomes hot, take pakora batter and pour it in the oil add around 7-8  of the pakora batter in the oil, fry till they become crisp and golden.

3.Drain the fried pakoras on kitchen paper towel.Serve the onion cabbage pakoras hot with tomato ketchup & hot ginger tea..

Falafel


It's a popular Middle Eastern food delicious Falafel with Tahini sauce.



Ingredients:

2 cups chickpeas / chole (Kabuli chana)
1 bunch of coriander leaves (Hara Dhaniya)
6-7 cloves of garlic crushed
1 tbsp Coriander powder
1 medium sized onion finely chopped
Salt as per taste
1/4 tsp black pepper powder
2 tbsp All Purpose flour (Maida)
1 tsp of baking soda (Optional)
3 tbsp Sesame seeds (Til)
2 tsp red chilli powder
1 tsp of cumin seeds or powdered (Jeera)
Oil  for frying
Method

For the Falafel

In a large bowl filled with water soak the chickpeas overnight. Drain and rinse the chickpeas with water.

Pressure cook the chole by giving around 8-9 whistles in pressure cooker and mash it coarsely and add  garlic, onions,coriander powder,salt,chopped coriander leaves,cumin seeds,black pepper powder, chilli powder,all purpose flour and mix it all. It should be coarse and not in a paste form.

Taste the mixture and check salt if required add salt .Cover the mixture with a cling film and refrigerate for 30 mins to 1 hour.

Now remove the mixture from refrigerator and add baking soda, sesame seeds and few drops of  water knead for a minute and let it rest for 3-4 minutes.

Now for frying Falafel:

Heat oil in the frying pan on medium heat.Make round balls of the falafel mixture with wet hands and drop the balls gently into the hot oil.Deep Fry on medium low heat for 5-6 minutes or until the falafel turns brown.Remove from oil onces done and place on a paper towel to absorb excess oil.

If Baking  Falafel:

Place the falafel patty on a greased baking tray and bake in the oven at 200 C for 9-10 minutes.

Ingredients for Tahini Sauce:

4 Tbsp of sesame seeds (Til)
1/2 cup Lemon Juice
5-6 cloves of garlic crushed
salt to taste

Method:

Roast the til seed in a pan for 4-5 mins switch off the flame ,allow it to cool and then blend it with garlic in a mixer until its smooth. Remove in a bowl add lemon juice and salt mix well and refrigerator it. 

Serving :

In a plate place the falafel along with the Tahini dip... Serve n Njoy!!!!

Steamed Methi Muthiya

Steamed Methi muthiya

Ingredients:
2 cups methi cleaned washed n chopped
2 cups of besan
1/2 cup rice flour (optional)
1 cup curd
1 green chilli finely chopped
1 tsp red chilli powder
1/2 tsp haldi
1 tsp ginger garlic paste
1 tsp coriander n cumin pdr
1/2 tsp til (sesame seeds)
Salt

For tempering:
Oil, rai, til, hing, fresh grated coconut, coriander leaves n curry leaves

Method:
In a bowl add methi, besan, rice flour, curd, salt , green chilli, red chilli powder, haldi, coriander, cumin pdr, ginger garlic paste n til. Mix all the ingredients well.. In case you feel that the mixture has moisture then add more of besan or rice flour... Make a smooth dough. Now grease the plate. Make big long elongated shaped muthiyas and steam them for 20 mins. Insert a knife n check it should not stick to it if it comes out clean switch off the flame. When it cools ,cut into pcs...

For tempering:
In a pan add oil, rai when it splutter add hing, til, curry leaves and the muthiyas mix it well.

For plating:
Arrange the pcs of muthiyas in a plate add fresh grated coconut n coriander leaves( if u don't like coconut don't add u can add only coriander leaves)... Serve hot....

Fried Methi Muthiyas

Ingredients:
2 cups methi cleaned washed n chopped

1 cup curd

1/2 tsp haldi
1 tsp ginger garlic paste
1 tsp coriander n cumin pdr
1/2 tsp til (sesame seeds)
Salt

Method:
In a bowl add methi, besan, rice flour, curd, salt , green chilli, red chilli powder, haldi, coriander, cumin pdr, ginger garlic paste n til. Mix all the ingredients well.. In case you feel that the mixture has moisture then add more of besan or rice flour... Make a smooth dough. Make big long elongated shaped muthiyas or even small shapes can be done. Now heat oil when it's hot add the muthiyas one by one and fry it till golden brown... Remove it on a paper towel.... Serve hot or store it in an airtight container...

Raw Banana Chips

Made it for the first time n my son loved it..


Ingredients:
2 raw bananas washed n peeled
Oil for frying
Salt

Method:
Wash n peel the banana with a knife n now cut it into small circles.. Heat oil when it's hot put the bananas n fry them in batches.. Keep turning it continuously so that both the sides are fried well. Remove in paper towel then in a vessel add salt n the fried banana chips toss it well n keep in an airtight container.. You can also make it by adding red chilli powder or black pepper powder....

Sabudana vada with potato & raw banana



Yummy yummy anytime snack...

Ingredients:
2 cups of sabudana washed n soaked for 5-6 hrs
1 potato n 1 raw banana boiled n mashed
1 cup roasted peanuts
4 green chillies
2 tsp cumin seeds
Salt
Coriander leaves finely chopped


Method:
Wash the sabudana in water till u get clear water. Soak it in water.In a bowl add mashed raw bananas, potatoes, peanuts, green chillies, salt, cumin seeds, sabudana n coriander leaves mix well.

Meanwhile heat the pan with oil for frying it.Now make small tikkis n keep aside.Onces the oil is hot put the vadas one by one fry one side n then flip to fry the other side.U can fry either golden brown or till it's brown in color...Remove the vadas in a paper towel... Serve hot with tomato sauce.....

Veg Burger

Veg Burger

One of the most relished snack enjoyed by kids.

Ingredients:
For the aloo tikki:
  • 3 medium sized potatoes
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 1/2 tsp chaat masala
  • 2 tbsp  rice flour or corn flour
  • 2 tbsp oil for frying the potato patties
  • salt
buns & the toppings:
  • 4 burger buns
  • 1 small tomato, thinly sliced
  • 1 big cucumber, thinly sliced
  • 4-5 lettuce leaves (I didn’t had so i have not used)
  • chaat masala as required
Method:
  1. Boil the potatoes in a pressure cooker peel and mash them when they are warm.
  2. Add all the spice powders and salt and mix well.
  3. Add the rice flour or corn flour and again mix well.
  4. Shape into round patties and shallow fry the tikkis till they are crisp and golden from both sided.
  5. Slice the burger buns horizontally and pan fry in some oil or butter till lightly crisp place the aloo tikki on slice.
  6. Top it with the sliced vegetables, lettuce sprinkled with some chaat masala.
  7. Cover with the other slice.
  8. Insert a tooth pick on the burger.
  9. Make all the aloo tikki burgers this way.
  10. Serve aloo tikki burger immediately with tomato sauce.

Chatpata n spicy corn cutlets

Ingredients:
1 corn cob ( American sweet corn)
4 small potatoes boiled n mashed
1 tsp ginger garlic paste
1 tsp chat masala n dry mango pdr
2 tsp red chilli powder
1/2 tsp garam masala
1 tsp coriander n cumin pdr
Salt n lemon juice
2 tbsp rice flour
1 tbsp besan n corn flour
1/2 cup coriander leaves chopped

Method:

In a bowl add mashed potatoes, corn, all flours, all dry spices, ginger garlic paste, salt, lemon juice n coriander leaves mix well.
Now grease your palm by applying oil and take small portion and give them desired shapes..
Heat oil when it's hot drop the cutlets and fry them on low flame till brown.. U can also shallow fry it on low flame... Serve hot with coriander chutney n tomato sauce....

(I have grinded the corn but it can be added by slightly crushing it depends on how you prefer)

U can also add green chillies in place of red chilli powder...  Breadcrumbs can also be used instead of flours......

Chatpata paneer

Chatpata paneer
Ingredients:
200 gms paneer
1 tsp oil
1 tbsp thick curd
1 tsp lemon juice
1 tsp coriander pdr, cumin pdr, amchur pdr, kasuri methi n Chat masala
Coriander leaves
Salt to taste
Method:
In a pan add oil coriander pdr, cumin pdr, amchur pdr, kasuri methi ,salt n chat masala mix it and now add curd and  paneer n toss it well so that all the masala will get coated nicely... Squeeze lemon juice n garnish with coriander leaves... Serve hot... It can be eaten with roti, chapati or as a side dish

250 gms  chicken minced
1 egg
1 tbsp ginger garlic paste
1 tsp tandoori masala, chat masala,red chilli pdr, garam masala
2 tbsp besan n rice flour
1 tbsp bread crumbs
Salt

Method:
Wash the chicken drain all the excess water add egg n all the dry spices,ginger garlic paste,besan,salt n rice flour mix well.

In case the mince chicken doesn't binds properly add more of rice flour n bread crumbs..

Rest it for 1 hr...

Heat oil when its oil drop the chicken popcorns in the oil fry it till it's brown in color. Remove it in a paper towel...serve hot with tomato sauce......

Pizza on tava


Pizza on tava



Ingredients:

For the tomato sauce
  • 4-5 tomatoes
  • 7-8 garlic finely chopped
  • 2 tbsp olive oil
  • 1 tsp oregano,red chilli flakes & mixed herbs
  • 1/2 tsp black pepper
  • 2 tbsp tomato sauce
  • salt

Toppings:
  • 8 mushrooms sliced
  • 1 capsicum sliced
  • few baby corns cut into 2 
  • grated mozzarella cheese & amul processed cheese as required

Method:
How to make the tomato pizza sauce:

Blanch the tomatoes & puree it.
Heat oil in a pan and fry the chopped garlic,
Add the tomatoes puree and tomato sauce.
let them cook for 3 minutes add the herbs, salt and pepper.
mix well cook further for 2 minutes.
How to make on a tava:

In a non stick pan brush some olive oil along with some butter on the pizza base flip it and place on the pan cover it with a lid onces the side is cooked flip it to cook the other side and now spread the tomato sauce on the cooked pizza top with the veggies and spread both the grated cheese again cover with the lid so that the cheese melts....Serve veg pizza hot........

Vada Pav

Vada Pav

Garam garam vada pav also known as Indian burger which is common man’s food in mumbai and is a popular street food snack it is tasty, spicy and delicious. 

The vada pav is served with garlic chutney & green chutney....Here is my version of making it....

Ingredients:

for potato stuffing:
  • 4 medium to large sized potatoes
  • 5 garlic, 1tsp of ginger, 2 green chillies
  • ½ tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp cumin seeds 
  • a pinch of asafoetida
  • ⅛ tsp turmeric powder
  • few curry leaves
  • 1 tbsp chopped coriander leaves
  • salt as required
for the batter:
  • 1 cup besan
  • a pinch of asafoetida
  • 1/2 tsp turmeric powder
  • 1 tbsp of rice flour
  • water
  • salt as required
for green chutney:
  • 1 cup coriander leaves
  • 3 garlic
  • 2 green chillies
  • salt 
  • Ginger small pc
  • 1/2 tsp tamarind paste
  • water to grind it
other ingredients:
  • 2 tbsp dry red chutney (I have used bedekar's garlic chutney)
  • 6 pavs
  • 4 fried green chilies mixed with some salt (optional)

How to make green chutney:
  1. Grind all the ingredients with little water till smooth. avoid making a watery chutney.

Preparing the batata vadas:
Boil 4 large potatoes, peel and then mash them in a bowl.
Heat oil in a small pan add mustard seeds, urad dal, cumin seeds and crackle them then add curry leaves and asafoetida stir and saute them then add garlic, ginger and green chilies add turmeric powder stir till the raw aroma of garlic goes away.
Pour this tempering in the mashed potatoes now add chopped coriander leaves also add salt.
Mix everything well and then make balls from the mashed potato mixture flatten these balls a bit.

In another bowl,make a smooth batter of besan,turmeric powder, a pinch of asafoetida,rice flour, salt and water. The batter should not be too thick or thin.
 If the batter becomes thin, add gram flour if the batter becomes thick, then add water n keep aside.In a kadai,heat oil for deep frying dip the slightly flattened potato balls in the batter and coat it evenly with the batter gently drop these in medium hot oil.

Deep fry these batata vadas till golden evenly 
drain them on kitchen paper towels. Take all the chutneys and pav & now assemble it.

Assembling vada pav:

Slice the pav without breaking it into two parts and keep aside. 
spread the green chutney on the sliced pav and sprinkle the dry garlic chutney now place the vada in the bread slices.
serve vada pav immediately along with some fried green chillies.

This snack is everyone's all time fav u can have it vn it's raining or any other time along with evening tea also... This is my son's fav snack whenever he is with us while purchasing veggies this has to be along with other veggies.. He is a big fan of brinjal pakoda........





Ingredients:

1 medium sized brinjal
1 cups of gram flour
1 tsp garam masala, red chilli pdr
1/2 tsp haldi, ajwain & hing
salt for taste

How to make brinjal pakoda:
  • Take a mixing bowl add gram flour, garam masala powder, red chili powder, hing , ajwain and salt. Mix all the ingredients well and with the help of little water to make a thick batter.
  • Wash the baigan and cut them into pieces If there is time to serve keep these cut baingan dipped in water.
  • Put two slices of the brinjal into the batter at a time. Slices should be well coated with the batter on both sides.
  • Drop gently into the hot oil and fry till the pakoras begin to turn golden around the edges.
  • Take them out on a kitchen towel and serve hot.

Rice Pattice

Rice  Pattice

I had 2 cups of leftover rice didn't wanted to eat so thought of making something out of it .....so made this. I know it's very simple dish many of u guys might have made it but this is my version.... Here it goes......

Ingredients:

2 cups of leftover rice
1 tbsp of rice flour
1 slice of bread ( made crumbs of it)
1 chopped onion
2 tsp of red chilli powder
1 tsp garam masala
1/2 tsp of turmeric n hing
Salt to taste
Coriander leaves

Method:

1. Mash rice add rice flour, onion,bread crumbs, red chilli powder, garam masala , turmeric, hing n salt mix well.

2. Now add coriander leaves ... Give desired shapes you can give any shape.

3. Heat oil vn it's hot drop the Pattice n fry it till golden brown...

4. Remove it on a paper towel. Serve hot with sauce....

Soya cutlets

Soya Cutlets





Ingredients:

2 cups Soya granules
2 boiled n mashed potatoes
1 cup bread crumbs
2 green chilies
2 tbsp corn flour
Lots of coriander leaves chopped
1tsp red chilli powder, garam masala
1/2 tsp haldi , coriander pdr, jeera pdr
Salt , half of lemon

Method:
Take a vessel filled with water VN it boils add soya granules along with little milk n keep it for 5 mins after that drain it n squeeze out the excess water .... 
Now in a bowl add the mashed potatoes , soya granules along with all d spices, cornflour, breadcrumbs, green chillies, salt n lemon juice .... 
N finally add lots of coriander leaves mix well...
 Now give shape of ur choice n keep in fridge for 15 minutes... Take out after that... Heat oil...
VN it's hot drop cutlets one by one slowly ....
.fry it on low flame one side dn flip it slowly n fry d other side ......onces done remove it in a kitchen towel. Serve hot with tea or rich tomato sauce......

Dal vada


Dal Vada

Ingredients:

2 cup of chana dal
1 tbsp rice flour
5 green chillies
few curry leaves
11 tsp ginger paste
1/2 cup coriander leaves
1 onion chopped
Salt as per taste
Oil for frying

Method:

1. Wash & soak chana dal for 3 to 4 hrs. Drain & grind the dal along with green chillies by adding little water to a coarse paste.

Note:
(The batter should be thick n not watery in case it's watery add more rice flour ...)

2. Onces done remove the batter in a bowl add rice flour, salt, ginger, curry leaves n coriander leaves mix well. 

3. Now give shape to it n deep fry it. 

4. Remove the vadas in a kitchen towel....

5. Serve hot with tomato sauce or coriander chutney....
