Vada Pav
Garam garam vada pav also known as Indian burger which is common man’s food in mumbai and is a popular street food snack it is tasty, spicy and delicious.
The vada pav is served with garlic chutney & green chutney....Here is my version of making it....
Heat oil in a small pan add mustard seeds, urad dal, cumin seeds and crackle them then add curry leaves and asafoetida stir and saute them then add garlic, ginger and green chilies add turmeric powder stir till the raw aroma of garlic goes away.
Pour this tempering in the mashed potatoes now add chopped coriander leaves also add salt.
Mix everything well and then make balls from the mashed potato mixture flatten these balls a bit.
In another bowl,make a smooth batter of besan,turmeric powder, a pinch of asafoetida,rice flour, salt and water. The batter should not be too thick or thin.
Deep fry these batata vadas till golden evenly drain them on kitchen paper towels. Take all the chutneys and pav & now assemble it.
Slice the pav without breaking it into two parts and keep aside.
spread the green chutney on the sliced pav and sprinkle the dry garlic chutney now place the vada in the bread slices.
serve vada pav immediately along with some fried green chillies.

Ingredients:
for potato stuffing:
- 4 medium to large sized potatoes
- 5 garlic, 1tsp of ginger, 2 green chillies
- ½ tsp mustard seeds
- 1/2 tsp urad dal
- 1/2 tsp cumin seeds
- a pinch of asafoetida
- ⅛ tsp turmeric powder
- few curry leaves
- 1 tbsp chopped coriander leaves
- salt as required
for the batter:
- 1 cup besan
- a pinch of asafoetida
- 1/2 tsp turmeric powder
- 1 tbsp of rice flour
- water
- salt as required
for green chutney:
- 1 cup coriander leaves
- 3 garlic
- 2 green chillies
- salt
- Ginger small pc
- 1/2 tsp tamarind paste
- water to grind it
other ingredients:
- 2 tbsp dry red chutney (I have used bedekar's garlic chutney)
- 6 pavs
- 4 fried green chilies mixed with some salt (optional)
How to make green chutney:
- Grind all the ingredients with little water till smooth. avoid making a watery chutney.
Preparing the batata vadas:
Boil 4 large potatoes, peel and then mash them in a bowl.Heat oil in a small pan add mustard seeds, urad dal, cumin seeds and crackle them then add curry leaves and asafoetida stir and saute them then add garlic, ginger and green chilies add turmeric powder stir till the raw aroma of garlic goes away.

If the batter becomes thin, add gram flour if the batter becomes thick, then add water n keep aside.In a kadai,heat oil for deep frying dip the slightly flattened potato balls in the batter and coat it evenly with the batter gently drop these in medium hot oil.
