Egg bhurji
Ingredients:
- 4 Eggs
- 2 chillies chopped
- 2 onion chopped finely
- 1 tomato chopped finely
- 1/2 tsp of rai, hing , urad dal
- few curry leaves
- a pinch of turmeric powder
- salt
- Coriander leaves
- 1 tbsp oil
Method:
- Finely chop the onion, chilli, tomato, and coriander leaves.
- Break the Eggs. Beat the eggs and salt. Beat the mixture really well.
- In a pan, heat oil. Add rai, urad dal, hing & curry leaves fry it well add the onions. When they are partly cooked, add the green chilly, tomatoes.
- Fry till the tomatoes get soft and mushy.
- Now add the beaten eggs. Stir the mixture.The eggs will start to cook.Keep on stirring.Otherwise it will start sticking bottom of the pan.
- Once the eggs are cooked and firm,remove from the pan.Garnish with coriander leaves.
- Serve egg Bhurji hot with bread.
