Stuffed Karela Shallow Fried





Ingredients:
4 Bitter gourd  (Size as u prefer Big, medium or small) I have taken big one
1 Onion finely chopped
1 tbsp amchur pdr
1/2 tsp chaat masala
1 cup besan
1 tsp Chilli powder
coriander leaves
1 tsp cumin seeds & Coriander pdr
1 tsp Ginger garlic paste
oil
Salt
Turmeric pdr

Method:
Slit gourds from one side remove seeds.Add oil in a pan add cumin and add onions fry till golden brown,add turmeric and besan flour, coriander pdr and cook till you get a nice aroma of besan now add ginger garlic paste and add chilli pdr and cook till nicely add amchoor pdr, chaat masala , saute in slow flame , add coriander leaves now onces the stuffing is cooled take the melons and stuff it with the cooked mixture and tie the karela with thread so the mixture is intact inside while cooking.....
Heat a pan add little oil and shallow fry in medium heat cover it with a lid keep  changing the sides till well cooked and crispy

Ingredients:-
3 eggs, 2 medium sized onion, 2 tomatoes, 1tsp chilli powder, haldi pdr,salt,malvani masala, coriander pdr, cumin pdr & garam masala as per ur taste and coriander leaves to garnish 
Method:
Boil eggs and keep aside.. heat oil in a pan, add onion n when translucent add tomatoes n all spices(turmeric powder,malvani masala,coriander pdr, cumin pdr, garam masala & red chilli powder) and cook till oil separates out. Tomatoes should be cooked well. Nw cut the boiled eggs n mix.. Be careful they should not break and now garnish with coriander leaves..Serve hot with rice or chapati......

One of the most relished snack enjoyed by kids.

Ingredients:
For the aloo tikki:
  • 3 medium sized potatoes
  • 1/2 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 1/2 tsp chaat masala
  • 2 tbsp  rice flour or corn flour
  • 2 tbsp oil for frying the potato patties
  • salt
buns & the toppings:
  • 4 burger buns
  • 1 small tomato, thinly sliced
  • 1 big cucumber, thinly sliced
  • 4-5 lettuce leaves (I didn’t had so i have not used)
  • chaat masala as required
Method:
  1. Boil the potatoes in a pressure cooker peel and mash them when they are warm.
  2. Add all the spice powders and salt and mix well.
  3. Add the rice flour or corn flour and again mix well.
  4. Shape into round patties and shallow fry the tikkis till they are crisp and golden from both sided.
  5. Slice the burger buns horizontally and pan fry in some oil or butter till lightly crisp place the aloo tikki on slice.
  6. Top it with the sliced vegetables, lettuce sprinkled with some chaat masala.
  7. Cover with the other slice.
  8. Insert a tooth pick on the burger.
  9. Make all the aloo tikki burgers this way.
  10. Serve aloo tikki burger immediately with tomato sauce.

Chatpata n spicy corn cutlets

Ingredients:
1 corn cob ( American sweet corn)
4 small potatoes boiled n mashed
1 tsp ginger garlic paste
1 tsp chat masala n dry mango pdr
2 tsp red chilli powder
1/2 tsp garam masala
1 tsp coriander n cumin pdr
Salt n lemon juice
2 tbsp rice flour
1 tbsp besan n corn flour
1/2 cup coriander leaves chopped

Method:

In a bowl add mashed potatoes, corn, all flours, all dry spices, ginger garlic paste, salt, lemon juice n coriander leaves mix well.
Now grease your palm by applying oil and take small portion and give them desired shapes..
Heat oil when it's hot drop the cutlets and fry them on low flame till brown.. U can also shallow fry it on low flame... Serve hot with coriander chutney n tomato sauce....

(I have grinded the corn but it can be added by slightly crushing it depends on how you prefer)

U can also add green chillies in place of red chilli powder...  Breadcrumbs can also be used instead of flours......

1 tsp coriander pdr cumin pdr

Method:
In a pan add oil n onion saute it till golden brown add ginger garlic paste fry for a min now add tomato puree and cook for 4-5 mins and now add all the dry spices mix well add salt again mix and now add eggs and garnish with coriander leaves... Serve with roti or rice...

Jeera aloo

Jeera aloo

It's a very common recipe I always had it in restaurants tried making at home for the first time

Ingredients:
5 potatoes boiled n chopped
1 tbsp jeera seeds
1 tbsp oil
1 tsp jeera pdr n coriander pdr
1/2 tsp dry mango pdr, red chilli pdr, haldi
1/4 tsp garam masala
Salt to taste
Coriander leaves for garnishing

Method:

Heat a pan add oil add jeera seeds when it splutters add all the dry spices (jeera pdr, coriander pdr, haldi, dry mango pdr, red chilli powder, garam masala n salt mix well.

Now add potatoes stir it add coriander leaves... Serve hot with roti

Ingredients:
200 gms paneer
1 tsp oil
1 tbsp thick curd
1 tsp lemon juice
1 tsp coriander pdr, cumin pdr, amchur pdr, kasuri methi n Chat masala
Coriander leaves
Salt to taste
Method:
In a pan add oil coriander pdr, cumin pdr, amchur pdr, kasuri methi ,salt n chat masala mix it and now add curd and  paneer n toss it well so that all the masala will get coated nicely... Squeeze lemon juice n garnish with coriander leaves... Serve hot... It can be eaten with roti, chapati or as a side dish

250 gms  chicken minced
1 egg
1 tbsp ginger garlic paste
1 tsp tandoori masala, chat masala,red chilli pdr, garam masala
2 tbsp besan n rice flour
1 tbsp bread crumbs
Salt

Method:
Wash the chicken drain all the excess water add egg n all the dry spices,ginger garlic paste,besan,salt n rice flour mix well.

In case the mince chicken doesn't binds properly add more of rice flour n bread crumbs..

Rest it for 1 hr...

Heat oil when its oil drop the chicken popcorns in the oil fry it till it's brown in color. Remove it in a paper towel...serve hot with tomato sauce......

Ingredients:

For the tomato sauce
  • 4-5 tomatoes
  • 7-8 garlic finely chopped
  • 2 tbsp olive oil
  • 1 tsp oregano,red chilli flakes & mixed herbs
  • 1/2 tsp black pepper
  • 2 tbsp tomato sauce
  • salt

Toppings:
  • 8 mushrooms sliced
  • 1 capsicum sliced
  • few baby corns cut into 2 
  • grated mozzarella cheese & amul processed cheese as required

Method:
How to make the tomato pizza sauce:

Blanch the tomatoes & puree it.
Heat oil in a pan and fry the chopped garlic,
Add the tomatoes puree and tomato sauce.
let them cook for 3 minutes add the herbs, salt and pepper.
mix well cook further for 2 minutes.
How to make on a tava:

In a non stick pan brush some olive oil along with some butter on the pizza base flip it and place on the pan cover it with a lid onces the side is cooked flip it to cook the other side and now spread the tomato sauce on the cooked pizza top with the veggies and spread both the grated cheese again cover with the lid so that the cheese melts....Serve veg pizza hot........

Vada Pav

Garam garam vada pav also known as Indian burger which is common man’s food in mumbai and is a popular street food snack it is tasty, spicy and delicious. 

The vada pav is served with garlic chutney & green chutney....Here is my version of making it....

Ingredients:

for potato stuffing:
  • 4 medium to large sized potatoes
  • 5 garlic, 1tsp of ginger, 2 green chillies
  • ½ tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp cumin seeds 
  • a pinch of asafoetida
  • ⅛ tsp turmeric powder
  • few curry leaves
  • 1 tbsp chopped coriander leaves
  • salt as required
for the batter:
  • 1 cup besan
  • a pinch of asafoetida
  • 1/2 tsp turmeric powder
  • 1 tbsp of rice flour
  • water
  • salt as required
for green chutney:
  • 1 cup coriander leaves
  • 3 garlic
  • 2 green chillies
  • salt 
  • Ginger small pc
  • 1/2 tsp tamarind paste
  • water to grind it
other ingredients:
  • 2 tbsp dry red chutney (I have used bedekar's garlic chutney)
  • 6 pavs
  • 4 fried green chilies mixed with some salt (optional)

How to make green chutney:
  1. Grind all the ingredients with little water till smooth. avoid making a watery chutney.

Preparing the batata vadas:
Boil 4 large potatoes, peel and then mash them in a bowl.
Heat oil in a small pan add mustard seeds, urad dal, cumin seeds and crackle them then add curry leaves and asafoetida stir and saute them then add garlic, ginger and green chilies add turmeric powder stir till the raw aroma of garlic goes away.
Pour this tempering in the mashed potatoes now add chopped coriander leaves also add salt.
Mix everything well and then make balls from the mashed potato mixture flatten these balls a bit.

In another bowl,make a smooth batter of besan,turmeric powder, a pinch of asafoetida,rice flour, salt and water. The batter should not be too thick or thin.
 If the batter becomes thin, add gram flour if the batter becomes thick, then add water n keep aside.In a kadai,heat oil for deep frying dip the slightly flattened potato balls in the batter and coat it evenly with the batter gently drop these in medium hot oil.

Deep fry these batata vadas till golden evenly 
drain them on kitchen paper towels. Take all the chutneys and pav & now assemble it.

Assembling vada pav:

Slice the pav without breaking it into two parts and keep aside. 
spread the green chutney on the sliced pav and sprinkle the dry garlic chutney now place the vada in the bread slices.
serve vada pav immediately along with some fried green chillies.

Ingredients:
250 Gms prawns washed n cleaned
2 onions n tomatoes chopped
2 green chillies
1 tbsp of ginger n garlic paste
4 cloves , pepper n 1 cinnamon stick
1/2 tsp haldi, red chilli pdr, hing,
Hand ful Paste of mint n coriander leaves
Coriander leaves to garnish
1/2 tsp of Coriander n cumin pdr
Salt n water
1/2 cup Curd (optional)
1 bay leaf
Oil n ghee


Method:

In a pan add oil n ghee add cloves, bay leaf, cinnamon stick pepper n fry it add onions fry till golden in color add ginger garlic n green chilies mix it add tomatoes n stir it cook it till the raw smell goes add paste of mint n coriander leaves along with all dry spices n curd mix it well add salt n prawns cook it till done.. Switch off d flame n garnish with coriander leaves

Arbi fry

Ingredients:

250 gms arbi washed n pressure cooked
1 tsp of Coriander n cumin pdr
Salt n a pinch of black pepper pdr...


Method:
In a cooker place a vessel with water arbi n little salt cook arbi give 1 whistle switch off...

Allow it to cool now drain the water n peel the skin of arbi.

In a pan add oil n deep fry it remember the oil should be hot fry it till golden brown...

Remove it n sprinkle salt, pepper pdr, coriander n cumin pdr ... Serve hot

Pesarattu Dosa

Pesarattu dosa or yellow moong dal dosa





Ingredients:
1 cup urad dal
1/2 cup yellow moong dal
3 green chillies
1/2 tsp cumin seeds
Few Curry leaves
Handful of coriander leaves
1/2 tsp Ginger
Salt
Oil

Method:
Wash n soak both the Dal's together for 4 hrs. Drain the water n grind to a smooth paste the dals along with ginger, curry leaves, coriander leaves, green chillies n cumin seeds..

Now add salt to the batter n keep aside for 30 mins.

Heat the dosa pan drizzle little oil and pour one ladle to the pan.. Allow it to cook one side then flip the other side to be cooked.

Onces it's done. Remove from the pan n serve it hot along with coriander chutney....

Hakka Noodles

Ingredients:

1 packet of Ching's noodles
1onion chopped
6-7 garlic cloves
1 small carrot cut into thin slices
1/2 cup chopped capsicum n French beans
Oil n salt
1/2 tsp pepper pdr
1tsp Soya sauce n red chilli sauce as per ur taste to spice
1/4 the cup spring onions



Method:
In a large vessel boil water when it boils add salt little oil n the noodles and cook it onces done drain it and run it onces under cold water. Keep aside...
In another pan add oil chopped garlic n onion saute it add all the veggies (u can add ur choice veggies)... Add salt n cook.
Now add soya sauce, pepper pdr n red chilli sauce toss it well n finally add noodles toss and ready to serve..... Enjoy .....

Prawns Pulao

Ingredients:

1tsp oil & 2tbsp ghee
Salt 1tsp
Cloves 2
Big n small cardamom 2 each
Jeera & fennel seeds 1tsp each
1 stick of cinnamon
1 bay leaf
Star anise 1
Coriander pdr 1 tsp
2 /3 green chillies chopped
1tbsp ginger garlic paste
4 onions chopped or puree
1 tomato chopped or puree
½ cup of mint / coriander leaves
½ cup of curd
Haldi & red chilli pdr 1tsp each
1tsp Kasuri methi


For Marination:
1/2 Kg Prawns, Haldi ½ tsp , lemon juice & Ginger garlic paste 1tsp, red chilli pdr ½ tsp & salt
Keep it for 1 hr.

For Rice preparation:
Take 1 cup basmati rice (I hv taken India Gate) wash & keep it aside with water in it for 30 mins. Meanwhile keep water in a large vessel for boiling.let the water boil well after that add little oil, salt , 4 cloves, 4 black pepper n one cinnamon stick along with rice keep watching till n cook it till its done now drain it keep aside

For the prawns masala:
Take a deep pan add oil & ghee together vn its hot add cloves bay leaf cardamom cinnamon pepper star anise and fry for a min…

Add green chillies n onion fry it well add ginger garlic paste n tomatoes saute till the raw smell goes add haldi red chilli pdr give a quick stir add coriander pdr, saunf (fennel seeds) & jeera mix well now add curd & kasuri methi & fry it well….. 
Add marinated prawns n cook till done…. Check the salt if required add …… now switch off the flame n add mint & coriander leaves (I had made a paste since my son doesn’t likes it when it comes in middle while eating)…… 
Now add rice to it n give a gentle stir…. Add more of coriander leaves in case u want u can also add fried onions on top & serve it raita of ur choice……. I had made cucumber raita…

Ingredients:
2 cups of sabudana washed n soaked for 5-6 hrs
4 potatoes boiled n mashed
1/2 cup roasted peanuts
4 green chillies
2 tsp cumin seeds
Salt n coriander leaves
1 onion chopped

Method:
Wash the sabudana in water till u get clear water. Soak it in water.
In a bowl add mashed potatoes, peanuts, chopped onion, green chillies, salt, cumin seeds, sabudana n coriander leaves mix well.
Meanwhile heat the pan with oil for frying it.Now make small tikkis n keep aside.
Onces the oil is hot put the vadas one by one fry one side n then flip to fry the other side.
U can fry either golden brown or till it's brown in color...
Remove the vadas in a paper towel... Serve hot with tomato sauce.....

Ingredients:
2 cups of sabudana washed n soaked for 6-7 hrs
1/2 cup roasted peanuts
2 potatoes boiled n mashed (I have not added)
3 green chillies
1 tsp jeera seeds
1 onion chopped
1/2 tsp mustard seeds
Curry leaves
Salt
1/4 tsp Sugar 
Oil


Method:
Wash sabudana till u get clear water  n soak it.
Heat a pan add oil ,rai ,jeera seeds, curry leaves, onion n green chillies saute it for 3 mins...
Now add roasted peanuts n potatoes mix it well add salt n sugar...
Add sabudana n keep stirring it for 7-8 mins...
Switch off the flame serve hot.... Enjoy with hot hot tea.....

Paneer Butter Masala

Ingredients
250 gms of paneer
2 onions & 2 tomatoes chopped or puree
1 tbsp of ginger garlic paste
2tbsp of cashew nut pdr
½ tsp kasuri methi ,salt , 
1 tsp garam masala
1 tsp of coriander & jeera pdr
Haldi & red chilli pdr
Cinnamon 1 inch, cloves 2, cardamom 1
3 tbsp Butter
Coriander leaves for garnishing
Water as required & fresh cream (optional)

Method:
In a pan add butter onces melted add the cloves pepper n cardamom
Add onion & tomato puree saute it till the raw smell goes..
Add ginger garlic paste, n cashew pdr mix well. Now add all the spices fry them well…
Add salt n kasuri methi mix well now add little water incase u want thin gravy...
Now add paneer & coriander mix well cook for 2 mins switch off the flame...
Serve with roti , chapatti , phulkas, naan or rice…

2 cucumber chopped
1 cup curd
Salt & 1tsp flax seeds
U can add coriander leaves n green chillies I hv not added
Mix well n serve……

Brinjal n potato sabji

Ingredients:
3 brinjal washed n cut into small cubes
2 potatoes washed n cut into small cubes
1 green chilli chopped
4-5 cloves of garlic chopped
1 onion n tomato chopped
Curry leaves
Haldi n 1/2 tsp red chilli powder
1-2 tbsp Fresh coconut
1 tbsp coconut oil
Salt
Coriander leaves for garnishing

For tempering:

1 tsp rai, urad dal, jeera n hing

Method:

In a pan add coconut oil or any vegetable oil (I hv taken coconut oil)
Add rai hing urad dal jeera, green chilli n curry leaves stir it now add garlic fry for a min...
Add chopped onion n saute till it becomes light brown now add tomato fry it it it's soft add potato n cook it for 3 mins now add brinjal n cook.....

Add salt , turmeric pdr n red chilli pdr to it mix well.... Onces its done switch off the flame n add coriander leaves n fresh coconut to it...

Ready to serve.... Serve hot with roti,chapati or steam rice....

Tomato Rice

Ingredients:
2 cups of cooked rice
2 tomatoes chopped
1 onion chopped
6-7 cloves of garlic chopped
Curry leaves
1 green chili
1/2 tsp Rai hing jeera red chilli powder n haldi
3 cloves, pepper n 1 cinnamon stick
Salt n 2 tbsp oil
Half lemon

Method:

In a pan add oil and then add garlic fry it till golden brown now add rai ,hing, jeera, curry leaves, cloves, pepper, cinnamon stick n green chili when it splutter add onion fry till it's brown...
Now add tomatoes and fry it well till it's soft now put rice, haldi ,red chilli powder n salt mix it well....
Squeeze lemon juice mix n serve hot with pickle, papad or raita......


Chawli Sabji

Ingredients:

250 gms of long string beans
1 onion chopped
few curry leaves
2 green chillies chopped
1 tsp of rai, jeera seeds & urad dal
1/2 cup of fresh grated coconut
1/2 tsp turmeric pdr
salt
water
Oil

Method:

Wash & cut the chawli beans into small pieces....
In a pan add oil, rai, jeera, hing, curry leaves & urad dal... add chopped onion & green chillies fry it and add turmeric mix well...
Now add the chawli beans little water & salt & cook it on low flame...
When it's cooked switch off the flame & add fresh grated coconut.... Serve hot with chapati



Egg Bhurji

Ingredients:

  • 4 Eggs
  • 2 chillies chopped
  • 2 onion chopped finely
  • 1 tomato chopped finely
  • 1/2 tsp of rai, hing , urad dal
  • few curry leaves
  • a pinch of turmeric powder
  • salt 
  • Coriander leaves
  • 1 tbsp oil
Method:
  • Finely chop the onion, chilli, tomato, and coriander leaves.
  • Break the Eggs. Beat the eggs and salt. Beat the mixture really well.
  • In a pan, heat oil. Add rai, urad dal, hing & curry leaves fry it well add the onions. When they are partly cooked, add the green chilly, tomatoes.
  • Fry till the tomatoes get soft and mushy.
  • Now add the beaten eggs. Stir the mixture.The eggs will start to cook.Keep on stirring.Otherwise it will start sticking bottom of the pan.
  • Once the eggs are cooked and firm,remove from the pan.Garnish with coriander leaves.
  • Serve egg Bhurji hot with bread.
